i. Biography
Adam Byatt is a Michelin-starred chef and restaurateur known for his modern British cuisine, having opened Trinity in Clapham in 2006, which earned a Michelin star in 2016 and AA London Restaurant of the Year. He previously launched Thyme in Clapham in 2001, which won Time Out Restaurant of the Year 2003 and Tatler Best Newcomer 2003, and later opened Bistro Union in 2012 and Upstairs at Trinity following a 2015 refurbishment. His career began with an apprenticeship at Claridge’s in 1989, followed by roles at the Berkeley Hotel and as sous chef at The Square under Phil Howard, where the restaurant gained its second Michelin star in 1998.
