i. Biography
Albert Au is the Chinese Executive Chef at the one-MICHELIN-starred Cantonese restaurant Jiang-Nan Chun in Four Seasons Hotel Singapore, having joined in 2021 after nearly three decades of experience in Chinese cuisine. Born and raised in Hong Kong, he began his career at age 14 and became the world's youngest Chinese chef to earn three MICHELIN stars in 2014 as Executive Chef at The Eight in Grand Lisboa Hotel, Macau. He previously earned a MICHELIN star for Island Tang in 2010-2012 and managed luxury Chinese restaurants for Hong Kong Lai Sun F&B Management Limited, including China Tang and Chiu Tang.
