i. Biography
Daniel Humm is a Swiss-born chef who began working in kitchens at age 14, completed an apprenticeship at Swiss Spa Hotel Schinznach-Bad under Viktor Geiser, and earned his first Michelin star at age 24 as chef at Gasthaus zum Gupf in Appenzell, Switzerland. In 2003, he became Executive Chef at Campton Place in San Francisco, then moved to Eleven Madison Park in New York in 2006, where the restaurant achieved three Michelin stars since 2012, topped The World's 50 Best Restaurants in 2017, and received seven James Beard Awards including Outstanding Chef and Outstanding Restaurant in America. In 2021, Humm relaunched Eleven Madison Park with a fully plant-based menu, becoming the first such restaurant to retain three Michelin stars.
