Davide Guidara is the Executive Chef of I Tenerumi Vegetarian Restaurant at Therasia Resort on Vulcano Island, Sicily, where he has pioneered vegetable-driven fine dining, earning one Michelin star and one Green Star in 2022, followed by a second Michelin star in 2025. Born in Cerreto Sannita, Campania, he became Head Chef at Eolian Milazzo Hotel at age 24, later refining his minimalist, umami-focused philosophy at SUM in Catania. He founded the 'Cook More Plants' movement and authored the 'Manifesto di Nuova Cucina Vegetale,' collaborating with the University of Messina on vegetable research.
