Born in 1987 in Fiuggi, Lazio, Donato Ascani trained at a local hospitality institute and worked in renowned Italian kitchens including L’Antica Pesa in Verona with Fabio Tacchella, ALMA in Colorno under Gualtiero Marchesi, Piazza Duomo in Alba with Enrico Crippa, and Tre Cristi in Milan with Paolo Lopriore. Since 2016, he has been the resident chef at Ristorante Glam by Enrico Bartolini at Palazzo Venart in Venice, earning two Michelin stars in 2019. His cuisine emphasizes instinctive technique, lagoon-sourced ingredients like fish and shellfish from Venice markets, and a deep connection to Venetian terroir.
