i. Biography
Eero Vottonen is the Chef & Owner of Palace Restaurant in Helsinki, Finland, where he revived the Michelin star in 2019 after a 30-year absence and elevated it to two stars in 2022. Originally from Tampere, he is one of Finland's most awarded chefs, including Chef of the Year (2012), Global Chef Challenge winner (2016), Nordic Chef Challenge winner (2017), 6th place at Bocuse d'Or (2017), and Chef of the Chefs (2017, 2019, 2023). At Palace, located on the 10th floor of a building from the 1952 Helsinki Olympics, he creates innovative Nordic cuisine with Japanese influences using high-quality local ingredients.
