Emmanuel Pilon is the Chef de Cuisine at Le Louis XV - Alain Ducasse à l'Hôtel de Paris in Monaco, a three-Michelin-star restaurant. Born June 6, 1986, in Lyon, France, into a family of restaurateurs, he trained under Meilleurs Ouvriers de France Christian Têtedoie and Davy Tissot before joining Alain Ducasse's brigade in 2009. After eight years at Plaza Athénée in Paris working with Romain Meder on the Naturalité philosophy, he returned to Monaco in May 2022 at age 35 to lead Le Louis XV's kitchen, where he has evolved the restaurant's Mediterranean cuisine toward plant-based and seasonal approaches. In 2025, he received two knives in the Best Chefs Awards, recognizing him among the world's most talented chefs.
