Enrique Olvera is the chef and owner of Pujol in Mexico City, which he opened in 2000 after graduating from the Culinary Institute of America and holds two Michelin stars, ranking among the world's top restaurants. He is renowned for elevating Mexican street food and regional ingredients into modern gastronomy, as exemplified by his signature mole madre dish. Olvera has received the 2015 Diners Club Lifetime Achievement Award for Latin America and the 2017 Global Gastronomy Award, and in 2024 won the MICHELIN Guide Mexico Mentor Chef Award.
