Fina Puigdevall, born May 30, 1963, in Olot, Spain, is the owner and chef of Restaurant Les Cols in Olot, Girona, Catalonia, which she founded in May 1990 in her family farmhouse. Her cuisine emphasizes kilometer-zero ingredients from La Garrotxa region and her own gardens, pioneering volcanic cuisine with a focus on local produce, sincerity, and minimalism. Les Cols has held two Michelin stars since 2010 and received three Repsol Suns, with architectural renovations by RCR Arquitectes earning awards including the 2003 FAD prize.
