i. Biography

Florent Nys is the Chief Winemaker (Chef de Cave) at Champagne Billecart-Salmon, a family-owned Champagne house in Mareuil-sur-Aÿ founded in 1818. Raised in Mesnil-sur-Oger in the Côte des Blancs, he studied biochemistry at the University of Reims before joining Billecart-Salmon in 2005 as an apprentice under François Domi. After nearly 20 years, he succeeded Domi as Chief Winemaker following Domi's 33-year tenure.[1][2][3]
