Franck Giovannini is a Swiss chef born in Tramelan in 1974, who completed his apprenticeship in 1989 at L’Auberge de la Couronne in Apples, Switzerland, under Claude Joseph. He worked abroad in Canada (1993-1995) and the United States (1999-2000, including with Gray Kunz in New York), won Bronze at the 2007 Bocuse d'Or, and joined Restaurant de l'Hôtel de Ville in Crissier in 1995 under Frédy Girardet, advancing to sous-chef in 2000 under Philippe Rochat, executive chef in 2012 under Benoît Violier, and taking full leadership in 2016 after Violier's death, maintaining the restaurant's three Michelin stars.
