i. Biography
Fredrik Berselius is the chef and owner of the two-Michelin-starred restaurant Aska in Brooklyn's Williamsburg neighborhood. Originally from Stockholm, Sweden, he studied nutrition at the Natural Gourmet Institute before working at New York City restaurants including Falai, Seasonal, Aquavit, and Per Se. He launched pop-up Frej in 2012, followed by the original Aska in the same Williamsburg location, which earned one Michelin star before closing in 2014; Aska reopened in a larger space near the Williamsburg Bridge in 2016 and quickly received two Michelin stars.
