Gaetano Trovato

Gaetano Trovato, born in Sicily and raised in Colle di Val d'Elsa, Tuscany, opened Ristorante Arnolfo in 1982 with his mother and sister, earning his first Michelin star at age 25 in 1986 and a second in 1997. He trained under masters including Angelo Paracucchi at Locanda dell’Angelo in Ameglia, Roger Vergé at Le Moulin de Mougins, and Gaston Lenôtre, blending Sicilian roots with Tuscan ingredients in his innovative cuisine. In 2022, for its 40th anniversary, Arnolfo relocated to a new site in Colle di Val d'Elsa, where he continues to emphasize seasonal regional produce and mentor young chefs, recently honored with a Michelin Chef Mentor Award.
