Giancarlo Perbellini, born in 1964 in Bovolone near Verona, Italy, began his career at restaurants including Marconi, 12 Apostoli, and San Domenico in Imola before training in France at Taillevent, L’Ambroisie, and La Terrasse. In 1989, he opened Ristorante Perbellini in Isola Rizza, earning one Michelin star in 1996 and two in 2002; in 2014, he relocated to Verona to open Casa Perbellini – 12 Apostoli in Piazza San Zeno, retaining two Michelin stars.
