i. Biography
Giovanni Santini is the son of Nadia and Antonio Santini, carrying forward the family legacy at the three-Michelin-starred Dal Pescatore in Canneto sull’Oglio, Lombardy, Italy. A graduate in Food Science and Technology from the Catholic University of Piacenza, he has been actively involved in the kitchen for over ten years, complementing his mother's cuisine with his own dishes faithful to Italian flavors. In 2012, he was named 'Best Emerging Chef' (Chef de l’avenir) by the Académie Internationale de la Gastronomie.
