i. Biography
Guillaume Lavollée is a Burgundy winemaker and the fourth-generation vigneron at Domaine Génot-Boulanger, alongside his wife Aude, managing 22 hectares across multiple appellations including Grand Crus and Premier Crus. He joined the domaine in late 2007 after a harvest internship there, moving from Paris where he had started a wine tasting program with his then-girlfriend. Since 2008, he has led improvements in farming, including biodynamic experiments starting in 2010, and took over running the domaine that year with Aude.
