Hajime Yoneda, born in October 1972 in Hirakata, Osaka Prefecture, Japan, graduated from Kinki University with a degree in electronic engineering and worked as a design engineer before entering culinary school in Osaka in 1998 and training in restaurants in Japan, Kobe, and France. In May 2008, he opened HAJIME Restaurant Gastronomi-que Osaka Japon in Osaka, earning three Michelin stars in just 17 months in 2009, the fastest in Michelin history. In 2012, he renamed it HAJIME, dropped the French cuisine label, temporarily lost two stars, and developed his original gastronomic style featuring the signature dish 'Chikyu' (Planet Earth) with 110 ingredients representing Earth's natural cycle.
