i. Biography
Hideki Ishikawa is the owner-chef of the three Michelin-starred Kagurazaka Ishikawa, a kaiseki restaurant he opened in Tokyo's Kagurazaka district in 2003 after 17 years training at establishments including Harajuku Sakura, Aoyama Hozumi, and Nogizaka Kamiya. Born in 1965 in Niigata Prefecture, he later opened sister restaurants Kohaku (2008) and Ren (2009), both of which also earned three and one Michelin stars respectively, and expanded the Ishikawa Group to include Guchokuni, Hato, Torakuro, and Ren Mishina. In 2023, he received the Michelin Guide Tokyo Mentor Chef Award for his dedication to training young chefs.
