i. Biography
Hideo Anami, born in Fukuoka Prefecture in 1949, began his culinary career at age 16 at a Japanese restaurant in Osaka and became head chef of Honkogetsu (formerly Kogetsu) in Osaka at age 25 in 1974, later assuming ownership. He specializes in seasonal kaiseki ryori using only the finest domestic Japanese ingredients, emphasizing tradition and seasonal experiences at his restaurant in Dotonbori, Osaka. In 2012, he received the Ryori Masters Bronze Award from Japan's Ministry of Agriculture, Forestry and Fisheries for contributions to promoting Japanese ingredients and culinary culture. Honkogetsu was rebuilt after a fire at Hozenji Temple destroyed the original location.
