Hidetoshi Nakamura is a Tokyo-based chef born in 1976, renowned for his minimalist Japanese cuisine emphasizing ingredient purity using pristine submarine spring water instead of traditional dashi. After training in Kyoto and Tokushima establishments and serving 11 years as executive chef at a one-Michelin-starred Tokyo restaurant, he opened Myojaku in Nishiazabu, Tokyo in 2022. Myojaku earned two Michelin stars in 2023 and three stars in the 2026 guide, ranking No. 45 on Asia's 50 Best Restaurants 2025.
