i. Biography
Hiroyuki Kanda, born July 1, 1963, in Tokushima City, is the eldest son of a family owning a Japanese restaurant there and opened his restaurant Nihonryori Kanda in Tokyo's Moto-Azabu in 2004. Since the inaugural Michelin Guide Tokyo in 2007, Kanda has held three Michelin stars for 13 consecutive years through at least 2020, later relocating to Toranomon. In 2008, he co-founded the NPO FUUDO with fellow chefs to advance the future of food, and in 2021 received the Michelin Mentor Award for training chefs whose restaurants earned Michelin recognition.
