Hitoshi Takahata is the owner and head chef of Taian, a three-Michelin-starred kaiseki restaurant in Osaka's Nagahoribashi district that opened in 2000. He trained for fifteen years at Aji-Kiccho, a kaiseki restaurant in Shinsaibashi, Osaka, before opening Taian at age 34. Takahata blends traditional kaiseki techniques with modern sensibilities, with a particular specialty in grilled meats, and has maintained three Michelin stars since 2011. His restaurant is known for its intimate 17-seat counter setting, extensive wine collection of approximately 200 wines, and warm hospitality provided alongside his wife, who manages the dining room.
