Hugo Roellinger, born in February 1988 in Saint-Malo, France, is a French chef who initially served as an officer in the merchant navy before training under chefs Michel Bras, Michel Troisgros, Pierre Gagnaire, and Michel Guérard, obtaining a CAP at Ferrandi. He took over the kitchens at Le Coquillage in Saint-Méloir-des-Ondes in 2014, earning two Michelin stars in 2019, a Michelin Green Star in 2020, a third Michelin star in 2025, and Gault&Millau Chef of the Year in 2021 and 2022. Son of three-Michelin-starred chef Olivier Roellinger, he leads the family establishments Les Maisons de Bricourt, focusing on seafood, seaweed, and sustainable Breton terroir ingredients.
