Javier Sanz is a Spanish chef and co-founder of Oba-, a one-Michelin-starred restaurant in Casas-Ibáñez, Albacete, which he opened in January 2022 with childhood friend Juan Sahuquillo. Born in 1997 in Casas-Ibáñez, Sanz earned Madrid Fusión's Revelation Chef award in 2021 and has expanded his culinary portfolio to include CEBO in Madrid's Hotel Urban (one Michelin star) and involvement with Grupo Cañitas' gastronomy division. His cuisine emphasizes farm-to-table principles, fermentation techniques, and collaboration with local producers from La Mancha and the Cabriel valley.
