Jérôme Banctel, born December 1, 1971, in Rennes, France, is the executive chef of Le Gabriel at La Réserve Paris since 2015, where he earned two Michelin stars in 2016 and a third in 2024. He trained at Lycée Hôtelier Notre-Dame in Saint-Méen-le-Grand and began his career under Michel Kéréver at Duc d’Enghien in 1991, later working at Vreugt en Rust in the Netherlands, Jules Verne, Les Ambassadeurs under Christian Constant, and spending ten years as sous-chef at L’Ambroisie with Bernard Pacaud. Prior to Le Gabriel, he served as chef exécutif at Senderens under Alain Senderens from 2006.
