Justin Cogley is the Executive Chef at Aubergine restaurant in L'Auberge Carmel, Carmel-by-the-Sea, California, where he joined in January 2011 and oversees all culinary programs. Previously, he served as Chef de Cuisine for two years and worked four years total at Charlie Trotter’s in Chicago, followed by Executive Sous Chef at the Elysian Hotel’s kitchen opening. Under his leadership, Aubergine earned two Michelin stars in 2025, a five-star Forbes Travel Guide rating in 2014, Wine Spectator's Best of Award of Excellence in 2014, Food & Wine Best New Chef in 2013, and James Beard Foundation nominations including Best Chef: West in 2015.
