Mario Sandoval (born Madrid, 1977) is a Spanish chef and the head of Restaurante Coque, which he took over from his father in 1999 and elevated to two Michelin stars. Winner of the Spanish National Gastronomy Award in 2013, Sandoval is recognized for his scientific approach to cuisine, blending traditional Madrid flavors with avant-garde techniques including supercritical fluid extraction, egg hydrolysis, and gastrogenomics. He also serves as Executive Chef at Haroma by Mario Sandoval, located in the Heritage Madrid Hotel, and is active in culinary research, consulting, and conference speaking.
