Masamitsu Hisano

Masamitsu Hisano is the chef-owner of Oimatsu Hisano, a kaiseki restaurant in Osaka, Japan, where he sources the finest seasonal produce from across the country to create unique dishes honoring Japanese seasonality and traditions. Born in Oita Prefecture in 1972, he crafts creative presentations such as sashimi with fish-broth dip and rare vegetable dishes. In 2025, Oimatsu Hisano received two Michelin stars, upgrading from its prior one-star status.
