i. Biography
Mathieu Pacaud, born in 1981 in Paris, son of three-Michelin-starred chef Bernard Pacaud of L'Ambroisie, began his career at age 15 at Jamin under Benoît Guichard and progressed through Plaza Athénée with Éric Briffard before leading kitchens in Lebanon and returning to L'Ambroisie as chef in 2009. In 2014, he opened Hexagone (1 Michelin star) and Histoires (2 Michelin stars) near Trocadéro in Paris, revived seafood institution Divellec (1 Michelin star) in 2016, launched La Table de la Ferme (1 Michelin star) in Corsica in 2018, and acquired Apicius near Champs-Élysées in 2018. He also revitalized historic restaurant Laurent in Paris.
