Matthew Villamoran

Matthew Villamoran is the Head Chef at Fable Kitchen, a Michelin Bib Gourmand-awarded farm-to-table restaurant in Vancouver's Kitsilano neighborhood, where he joined in 2023 after a two-decade career including stints at Raincity Grill, Bao Bei, The Parlour, and Tractor Foods. Classically French trained with early experience in Italian and Italian-inspired restaurants, he modernizes traditional Filipino recipes using French, Italian, and contemporary techniques alongside local West Coast ingredients. He emphasizes sharing Filipino culture through food with family and colleagues.
