i. Biography
Michael Balboni is a Chef and Co-Owner of Twist Catering, and Co-Executive Chef of Le Pavillon at One Vanderbilt in Midtown Manhattan. A graduate of the Culinary Institute of America who interned at Picholine, he began his career at Restaurant DANIEL in New York City, where he was promoted to Sous Chef by age 23. He subsequently served as Executive Sous Chef at L'Atelier de Joël Robuchon under legendary Chef Joël Robuchon before joining the opening team at Le Pavillon in May 2021, where the restaurant earned four consecutive Michelin stars under his direction.
