Mingoo Kang is the chef-owner of Mingles, a three Michelin-starred restaurant in Seoul, South Korea, which he opened in 2014 after training in the United States, Europe, and with mentors like Martín Berasategui, Cho Hee-sook, and Buddhist nun Jeong Kwan. His cuisine reinterprets traditional Korean flavors using modern techniques and fermentation processes, earning Mingles the No. 5 spot on Asia’s 50 Best Restaurants 2025 and the Inedit Damm Chefs’ Choice Award 2021. In 2020, he expanded with HansikGoo in Hong Kong and co-authored a cookbook in 2024.
