Chef Nozomu Abe is a Hokkaido-born sushi chef and proprietor of Sushi Noz in New York, which has held two Michelin stars since its opening in 2018. After training as an apprentice in Sapporo and perfecting Edomae-style sushi techniques under master chefs in Tokyo, he moved to New York in 2007 and worked at the renowned Sushiden before establishing his namesake restaurant. His cuisine is rooted in childhood experiences with premium seafood from his grandfather's company, featuring ingredients like uni, salmon roe, and king crab as cornerstones of his culinary philosophy.
