i. Biography
Olivier Chaignon, born in 1978 in Montargis, France, began his career as an apprentice at Auberge de la Clé des Champs in 1994, winning first prize in France’s national 'Young Apprentice Chef' competition in 1996. He worked at prestigious kitchens including Taillevent and Pierre Gagnaire in Paris before moving to Japan in 2005 as Executive Chef at Pierre Gagnaire Tokyo, later at Pierre Gagnaire in ANA InterContinental Tokyo. Since 2013, he has been Executive Chef at L'Osier in Tokyo's Ginza, leading it to three Michelin stars in 2019, which it has retained, along with Gault et Millau Tokyo 2017 'Chef of the Year' and high LA LISTE rankings.
