Paco Morales is a Spanish chef born in Córdoba in 1981 who trained at renowned establishments including Ferran Adrià's El Bulli and Andoni Luis Aduriz's Mugaritz before opening his flagship restaurant Noor in 2016. He is celebrated for reinterpreting Andalusian cuisine through a historical lens, tracing the culinary evolution of Al-Andalus across centuries using period-appropriate ingredients and collaborating with historians and archaeologists. Noor earned its first Michelin star in 2016, a second in 2019, and a third in 2024, establishing it as a milestone in international gastronomy.
