Pedro Subijana Reza, born November 5, 1948, in San Sebastián, Spain, is a pioneering chef of New Basque Cuisine who took over Restaurant Akelarre in 1975 on Mount Igueldo, elevating it to three Michelin stars (1987, 1997, 2006). He trained at the Hospitality School of Casa de Campo in Madrid and Luis Irizar Cooking School in Zarautz, and trained under Juan Mari Arzak in 1970 before founding initiatives like Euro-Toques in 1986 and promoting the Basque Culinary Center.
