i. Biography
Richard Ekkebus is a Dutch-born chef and Culinary Director of The Landmark Mandarin Oriental Hong Kong, where he has served as executive chef of the fine dining restaurant Amber since its opening in 2005. He trained under Michelin-starred chefs including Alain Ducasse, Pierre Gagnaire, Alain Passard, and Guy Savoy in France, and later held executive chef positions at the Royal Palm Hotel in Mauritius (seven years) and The Sandy Lane in Barbados (two years) before establishing Amber. As of April 2025, Amber has achieved three Michelin stars and a Green Star, making it the only restaurant in Hong Kong with this distinction.
