i. Biography
Sidney Schutte is a two-Michelin-star chef born in Middelburg, Zeeland, Netherlands, who began his career at age 16 and trained at prestigious kitchens including two-star De Scholteshof in Belgium and three-star De Librije in Zwolle under Jonnie Boer, where he served as chef de cuisine for 10 years. He later worked as executive chef at Amber in Hong Kong, led Librije's Zusje (later renamed Spectrum) at Waldorf Astoria Amsterdam earning two Michelin stars in 2015, and took full control of the two-star Spectrum in 2019 after a handover from the Boers. Schutte holds the title of SVH Meester-Kok, the highest recognition for a chef in the Netherlands, and has expanded to executive chef at Cocina de Autor at Grand Velas Los Cabos in Mexico (one Michelin star) and co-owner of Restaurant Molina in Kuala Lumpur.
