Stefan Wiesner is the avant-garde natural chef and owner of Rössli in Escholzmatt, Entlebuch, Switzerland, where he has pioneered alchemistic cuisine using exclusively local ingredients, woods, stones, soil, and charcoal for over 20 years. Trained classically at Hotel Château Gütsch in Lucerne, he took over the family restaurant in 1989 at age 27 and earned 1 Michelin star and 17 Gault Millau points. Known as the 'Wizard of Entlebuch,' he now operates Wiesner Mysterion in Romoos and plans to helm the Heiligkreuz wellness hotel's Haus Klar.
