i. Biography
Takeo Shimura is the chef and owner of Tempura Naruse, a renowned tempura restaurant in Shizuoka City, Japan, specializing in omakase courses featuring fresh Suruga Bay seafood and local produce. Originally from Kanagawa Prefecture, he returned to Japan to obtain his culinary license before training for over six years at Shizuoka kappo restaurant Yaizu Tachikichi, where he managed the tempura space. He opened Itamaetempura Naruse in September 2007 at 2-5-12 Takajyo, Aoi Ku, Shizuoka Shi, and relocated near Sengen Shrine in 2020.
