i. Biography
Tetsuya Wakuda, born in Hamamatsu, Japan in 1959, moved to Sydney in 1982 and trained under chef Tony Bilson at Kinsela's, learning classical French techniques that he fused with Japanese philosophy. He opened his flagship restaurant Tetsuya's in Sydney's Rozelle in 1989, which earned three hats from the Sydney Morning Herald Good Food Guide and ranked among the world's top restaurants. In 2010, he launched Waku Ghin at Marina Bay Sands in Singapore, which received two Michelin stars from 2017 to 2023 and was listed on Asia’s 50 Best Restaurants.
