Zaiyu Hasegawa is the chef and owner of Jimbocho Den, a two Michelin-starred restaurant in Tokyo's Jimbocho district, which he opened in 2007 at age 29. Born in Tokyo on June 2, 1978, to a geisha mother who worked at a ryotei, he began training at Uotoku Kagurazaka at age 18 and gained experience at various restaurants before independence. Den has earned accolades including two Michelin stars since 2011, #3 on Tabelog, #17 on The World’s 50 Best Restaurants, and the Chefs’ Choice Award.
